Honey Mustard Chicken, Bacon and Avocado Salad

Back at it again with my new found love for avocado’s!

This time with a honey mustard chicken, bacon and avocado salad. I found this recipe on Facebook posted by Buzzfeed’s partner Tasty. This recipe actually has two recipes, one for the dressing/marinade and one for the actual salad.

The dressing/marinade calls for:

  • 2 tbsp olive oil
  • 1/3 cup honey
  • 3 tbsp stone ground mustard
  • 2 tbsp dijon mustard
  • Juice from 1/2 a lemon
  • 1 tsp of minced garlic
  • salt
  • pepper

This marinade was very easy, you just have to throw all of the ingredients into a bowl and whisk them together. Then using only have of the marinade, you will marinate the chicken. After the chicken is completely marinated you will cook the chicken in a non stick pan.

The salad calls for:

  • 1 head of romaine lettuce (chopped)
  • 1 cup of cherry tomatoes
  • 1/4 red onion, thinly sliced
  • 1 avocado passed
  • Hard-boiled egg
  • Bacon, diced

This part is easy as well, basically you take all of the ingredients and throw them into a bowl together. After that is down, you will slice up your chicken and place it into the salad, add the remaining dressing/marinate. You will then toss your salad to coat the lettuce, then add the bacon and enjoy!

I kid you not when I say this might be my favorite recipe that we have tried thus far! Max is getting tired of salads but this one is definitely going to be a keeper and repeater in my book of recipes!

Grilled Shrimp and Vegetable Bowl

Max and I just got a new puppy, his name is Lane and he is a silver lab. He is a handful, to say the least. We are still trying to stick to our healthy eating “diet” as well as we can with our busy lifestyle, and now we have even less time trying keep Lane in line. So, I found a really simple, and delicious recipe that I was really excited to try.

The recipe is a grilled shrimp and vegetable bowl, and it calls for these ingredients:

  • 12 oz Large (peeled and deveined) shrimp $6.58
  • 1 Zucchini $2.98
  • 1 Bell pepper $1.98
  • 4 small corn cobs (since corn on the cob is out of season we got it in the can) $1.48
  • 1 Avocado $1.25
  • Juice from 1 lime $.10
  •  Seasonings (Already had)
  • Olive Oil (Already had)

I really liked the seasoning choices of this recipe, onion powder, garlic powder, paprika, black pepper, and cayenne pepper. I really enjoy spicy food so the use of cayenne pepper got me excited for how flavorful the shrimp was going to be.

This recipe was super easy to make because you grill all the veggies until they are almost cooked, then you grill the shrimp for only a couple of minutes, add the avocados and lime last, then the meal is complete!

This meal for us totaled $14.37 before tax! What a steal for such a great meal! We really enjoyed this meal, next time we make it we decided that we would serve it over rice instead of by itself.

Ground Turkey Sweet Potato Skillet

For the last year i’ve had an odd obsession with sweet potatoes. I love their flavor and how versatile they are when it comes to cooking. Sweet potatoes could be cooked as fries, as tots, they can be roasted, and so many other cooking methods.

So, for Max and I’s second recipe in our healthy at home eating “diet”, we decided to try a ground turkey sweet potato skillet. We actually came across this recipe on Facebook, which was linked to a food blogger called Primavera Kitchen.

The recipe calls for:

  • 2 tbsp olive oil
  • 1 lbs ground turkey
  • 1 tsp minced garlic
  • 1/2 cup diced onion
  • 1/2 cup diced yellow pepper
  • 1.5 cup diced sweet potato
  • Pinch of chili flake
  • 1/2 cup shredded mozzarella cheese

I thought this was such an easy recipe because it was a one pot recipe. You cook the turkey with the garlic. Next, you add in the onion and yellow pepper, add the sweet potato and chili flake. Then you just cook until the sweet potato is tender. Once the sweet potato is tender you add the cheese and throw the pot into the oven to melt the cheese.

It was such a simple recipe, but had such good flavor. Although Max and I both added hot sauce to our meal, it had great flavor without the hot sauce as well.

So far the two recipes that we have tried are making us enjoy this healthy eating “diet” a lot more than we thought we would. Finding recipes that are inexpensive are helping as well.

Avocado Chicken Salad – Salad

The first healthy inexpensive recipe Max and I decided on trying is, Avocado Chicken Salad – Salad. I found this recipe from a fellow blogger’s website called Natasha’s Kitchen.

The recipe calls for:

  • 1 rotisserie chicken (shredded)  $4.98
  • 2 avocados $2.49
  • 1 cup of corn (cut from cob) $2.29
  • 6oz of bacon (cooked and chopped) $3.34
  • 1/4 cup chives (chopped) $1.98
  • 2 tbsp dill (chopped) $1.98 

The recipe also has a dressing recipe, but we skipped that and used our favorite type of dressings that we already had. Max really enjoyed his salad with ranch dressing, and I enjoyed it with honey mustard.

The recipe is originally designed to be eaten as is, but Max and I decided to spice it up a bit and eat it on top of a spring greens mix ($3.46). We decided on this recipe not only because it sounded delicious but because most of it’s ingredients are fairly inexpensive (see above). We spent a total of roughly $20 making this dinner, which is what a couple would also roughly spend on a night of fast food. For a dinner totaling around $20 that is healthy and delicious, I would much rather eat this and be healthy, then use the excuses of fast food being cheap and fast.

After making this meal, we decided that it was one of our new favorites. It was quick, easy, and very good. I think this meal will be made in our house very often.
